The first time that I made angel food cake I googled this exact question. I didnt have a tube pan and thought that the hole in the middle of the cake was for visual aesthetic rather than function. Long story short I was wrong. Using a tube pan is important if you plan on using the batter for cake instead of cupcakes .

Since this cake is so light and does not use a leavening agent like yeast, baking powder or baking soda, it requires the hollow tube in the centre of the tube pan to climb up. This is also why we use a non-greased pan when making angel food cake recipes. If we grease the pan, the cake will not climb as high and will result in a more dense finished product.

If you dont have a tube pan but are set on making angel food cake in any shape or form, that is no problem. Instead you can make angel food cupcakes! Pour the batter into non-greased cupcake pans, and bake for 10-15 minutes or until golden brown. Be sure to check on them periodically while in the oven, as the baking time may vary.

I don’t suggest using a bundt pan for this recipe. An angel food cake pan is inexpensive and totally worth having. You will need to run a knife around the edge of the pan to get the cake to release. Using a bundt pan with it’s intricate edges makes that really hard .

I prefer a two piece angel food cake pan. They cost a bit more, but I think it’s worth it to spend more for a pan that makes getting your cake out really easy! For the two piece pan you can run a knife around the edges to release the sides and then run a knife along the bottom of your cake to get the second piece off. You are left with a nice clean edge and no fighting to get your cake out of the pan.

  • When separating the eggs, do not allow any yolk to get into the egg whites.
  • Do not overbeat the egg whites because you want soft peaks. If you overbeat the egg whites, it could cause them to deflate.
  • Only add ¼ cup of the flour mixture to the egg white mixture at a time.
  • Do not grease the tube pan.
  • Cut gently through the cake batter with a butter knife. It helps to release any air bubbles.
  • Immediately flip the cake over and cool the cake upside-down. Angel food cake MUST be cooled upside down or the cake will collapse on itself.
  • Use a serrated knife to slice.

How To Make Gluten

1. In the bowl of a food processor, process the gluten-free flour and powdered sugar together until smooth, about 30 seconds.

2. Sift the flour/powdered sugar mixture into a bowl and set aside.

3. Process the granulated sugar slightly, about 5-7 pulses. You dont want to turn it into powdered sugar, just a little finer than it is normally. Set aside.

4. Place egg whites in the bowl of a stand mixer. Add the salt and cream of tartar. Using the whisk attachment, beat on medium speed until starting to foam and soft peaks form. You can also use a hand mixer.

Tip: You can separate the egg whites from the egg yolks or simply buy carton egg whites for this recipe.

5. Add the pure vanilla extract and almond extract and continue whipping on high speed.

6. Add the granulated sugar slowly, about 2 tablespoon at a time to the egg whites while they are whipping.

7. Continue whipping until stiff peaks form.

8. Slowly fold in the dry ingredients 1/4 a cup at a time with a rubber spatula. Do this carefully and slowly so you dont deflate the egg whites. This is the key to good traditional angel food cake!

9. Spread the angel food cake batter in a ungreased, 10-inch round angel food cake pan.

Tip: An ungreased 10-inch tube pan is key for this recipe. You need a special round angel food pan for best results so the cake can have enough room to expand. Unfortunately a bundt pan wont work the same.

Assuming you would like a recipe for free angel food cake gluten: Ingredients: 1 cup white sugar 1/2 cup tapioca flour 1/2 cup potato starch 1 teaspoon xanthan gum 1/4 teaspoon salt 12 egg whites 1 teaspoon vanilla extract Directions: 1. Preheat oven to 375 degrees F . Grease and flour one 10 inch tube pan. 2. In a large bowl, combine the sugar, tapioca flour, potato starch, xanthan gum, and salt. Stir well and set aside. 3. In a medium bowl, whisk together egg whites and vanilla extract until foamy. 4. Pour the egg white mixture into the sugar mixture. Beat with an electric mixer on low speed until well combined. 5. Increase the mixer speed to high and beat for 8 to 10 minutes, or until stiff peaks form. 6.
